I’ve found the best loaded potato soup recipe and I just had to share it with you all. This is the perfect soup to take to a friend during those chilly months or to put in the crockpot in the morning for a cozy dinner that evening.
*Ingredients*
- 5 slices of bacon, diced
- 3 pounds of russet potatoes, peeled and chopped (I dice them)
- 3.5 cups chicken stock
- 1/2 onion, chopped
- 3 cloves garlic, minced (or 1.5 tsp of minced garlic)
- 2 sprigs fresh thyme (1-1.5 tsp dried thyme)
- 1-2 tbsp unsalted butter
- 1-2 cups of shredded cheese
- 2/3 cup sour cream
- 1/2 cup heavy cream
- Kosher salt and fresh ground pepper, to taste

- Heat a large skillet over medium-high heat and cook bacon until brown and crispy. Transfer to a towel-lined plate.
- Place potatoes into a slow cooker. Stir in chicken stock, onion, garlic, thyme, butter, and bacon until well blended.
- Cover and cook on low heat for 7-8 hours or high for 3-4 hours.
- Mash potatoes using a potato masher until you reach your desired consistency. Stir in cheese, sour cream, and heavy cream until smooth. Then, season with salt and pepper.
- Cover and cook on low heat until warmed through – about 15-20 minutes. If the mixture is too thick, add more chicken stock as needed.
- Serve immediately, topped with shredded cheddar, and a dollop of sour cream, and green onions.
