This is one of my favorite lunch recipes. It’s delicious on crackers or a sandwich and perfect for summer!
*Ingredients*
6-9 eggs {makes about 3-4 servings}
2-3 tbsp mayo
salt and pepper to taste
2 tbsp sweet pickle relish
dash of mustard
*Directions*
1. Boil eggs as normal.
2. Once you reach a rolling boil, turn burner off and cover. Let sit for 10 minutes.
3. Drain and rinse with cool water, let sit for another 10 minutes to cool.
4. Peel the shell off the eggs and shred eggs with a cheese shredder.
5. Once finely shredded, add mayo, mustard, relish, and salt/pepper.
6. Cool or serve immediately.
