This recipe is great with fresh summer vegetables but can be made in the winter as well. It’s easy and quick – Perfect for a weeknight meal!
*Ingredients*
Squash
Zucchini
Onion
Kielbasa
Potatoes {optional}
Tomato {optional)
Your favorite seasonings
*Directions*
1. Cook the kielbasa first in a skillet with heated olive oil. Cook thoroughly. While this is cooking, chop up other vegetables.
2. Place meat aside in a bowl or plate while you cook the rest of your vegetables in the skillet.
3. Once the vegetables are cooked and begin to get soft, add the kielbasa.
4. Toss in a tomato at the very end to add some color.
5. Serve hot on a plate and sprinkle with seasoning. {I used Natures Seasonings}.
